Guatemala Finca Cuevitas

We hope you enjoy trying this unique experiment in processing from a small farm in the Huehuetenango region of Guatemala. A variation on washed processing with extended cool temperature fermentation in cherry before the pulping process and traditional washed process steps begin. The resulting cup profile shows a clean, sweet, and complex fruit character, with a syrupy body, dark cherry sweetness, brown sugar and balanced by milk chocolate notes. It makes for a lovely session drinking coffee for any preparation method with a perfect balance of body, sweetness and refined acidity.
